Abstract

Considered popular in the consumer market of sausage products: ham and solid piece meat products. Identified requirements for specialty product from the customer.-lay. The role of functional-technological systems - combined complex additives, which improve the texture, working as a link, give a taste and make the product visually appealing. The characteristic of the components contributing to the increase in yield, without compromising food and biological value of finished products. Marked technological particularities of the production of ham products and a solid piece. Recommendations on improvement of technological process of production of the above products.
