Abstract

Meat puddings are easily digestible hot meat dishes, prepared mainly of boiled meat, which reduces the nutritional value of these products. In the work are developed puddings of minced meat mass containing a mixture of extruded wheat bran, whole grain millet and peas. The percentage of the mixture of extrudates for the partial replacement of meat raw materials are selected. The use of a mixture of extrudates can improve functional and technological properties, nutritional value of the finished products.
