Abstract

The article notes the importance of turkey meat, which is characterized by high nutritional value. According to the results of 2022, Damate produced 216 thousand tons of turkey meat in slaughter weight, which is 8% more than in 2021. Of this volume, 166 thousand tons were produced in the Penza region. The composition of a vertically integrated complex for the production and processing of turkey meat in the Penza region is presented. The main directions and types of activities of the OSP «Plant for deep processing of turkey meat» are noted. The main workshops of the plant are presented with a description of modern high-tech automated equipment from leading world manufacturers. The characteristics of the products are given. Boiled sausages and sausages made from turkey meat make up a large proportion of processed products. In second place is the production of ham from turkey muscle meat. The main advantages of the turkey meat production process are noted. A forecast of the development of turkey meat production in the near future is given, the turkey industry in the Penza region and in Russia has real opportunities for further development.
