Abstract

The article notes the importance of vegetable oil. Sunflower oil is currently the most popular type of vegetable oil. The article reveals the features of the technology of sunflower oil production. It identifies the indicators that affect the quality of raw materials for the production of sunflower oil. The article also discusses the factors that influence the choice of technology for the production of sunflower oil. New technologies used in the production of sunflower oil are presented. The choice of sunflower oil production technology is analyzed. The storage conditions for sunflower oil are listed.
