COMPARISON OF FATTY ACID COMPOSITION OF DIFFERENT TYPES OF EDIBLE OILS

Abstract

In recent years, there has been a growing interest in the composition of fatty acids and the effects of oils on human health. Fish oil is a rich source of omega-3 fatty acids, and vegetable oils (nut, sunflower, pumpkin, olive) are a good source of linoleic acid. In flaxseed oil, alpha-linolenic acid is the main representative of fatty acids. The aim of this study was to determine the fatty acid composition of oils from fish, flaxseed, walnut, pumpkin, olive and sunflower oils, as well as the potential impact on human health when consuming them.
