The relevance of the issue discussed in the article follows from the current state of public catering in the country, when technological operations for the development of food products, performed manually, are replaced by machinery with the help of appropriate equipment. The paper substantiates the approach to the feasibility study of the use of a dumpling machine, depending on certain conditions of production of this type of product in catering.
