USING OZONE AS AN ALTERNATIVE TO TRADITIONAL DISINFECTANTS

This article examines the role of ozone as an alternative disinfectant in the food industry. It is important for consumers that disinfectants used in the food industry ensure the quality and microbiological safety of food products. It is also important that they do not endanger their health through toxic intermediate products. In this regard, there is a growing interest in alternative disinfectants, including ozone. The ozone molecule, due to the splitting of the third oxygen atom, is a strong oxidizer and an effective means of destroying microorganisms. Ozone is used to disinfect waste and drinking water, as well as throughout the food industry to disinfect equipment and production facilities.
