Abstract

The article discusses the development of a functional drink containing apple juice and wheat germ. Data were obtained on the change in the nutritional value of fruit juice after the addition of wheat germ. The most appropriate pasteurization scheme has been determined, which ensures the food safety of the product and minimally denatures phytochemicals valuable for health. Raw materials and produced juices underwent quantitative chemical analysis for chlorophyll, vitamin C, total polyphenols, antioxidant activity and minerals (P, Ca, Mg, Fe, Na and Zn). Made microbiological analyzes for the presence of pathogens.
